A Square sales report by item shows units and net sales for every item you sold in a period. Square Dashboard has it under Reports; the Items export gives the same data one row per item sold, so you can split it by location, hour, day of week or discount.

In Square Dashboard

Go to Reports → Item Sales, choose the date range and location, and sort by net sales or quantity. Use Export → Detail CSV for one row per item sold, or Summary CSV for one row per item. The detail export is the one to analyse.

By item and location in Excel

Open the detail CSV, insert a PivotTable with Item in Rows, Location in Columns and the sum of Net Sales in Values. Add Qty for units. Net Sales is Gross Sales after Discounts; use it rather than Gross Sales when you want what you actually took.

By day of week and hour

Add a column =TEXT(Date,"ddd") for the weekday and use the Time column's hour for the busiest hours. That turns the item report into a staffing and prep plan: which items sell when.
